5 Creative Ways to Use Your Thanksgiving Leftovers

4 min read

Thanksgiving, a meal we look forward to all year long. A dinner filled with family favorites, nostalgic recipes, and maybe a little friendly competition over who makes the best mashed potatoes. You arrive ready to fill your plate with all the good stuff and enjoy every bite.

And just when you think the feast is over, you head home with a bag full of Tupperware and wonder: What am I going to do with all these leftovers?

Your Thanksgiving leftovers don’t have to mean eating the same plate of turkey, stuffing, and mashed potatoes for the next five days. With a little creativity, those holiday staples can transform into delicious, satisfying meals that keep the holiday spirit alive all week long.

As dietitians, we love a meal that tastes good, feels satisfying, and helps reduce food waste. And many of your Thanksgiving favorites can fit into a balanced meal. Think protein, carbohydrates, colorful fruits and veggies, and fats that help bring it all together.

Here are 5 ways to turn your Thanksgiving extras into meals worth looking forward to.

1. Turkey & Cranberry Sandwich

This sweet-and-savory sandwich is the perfect way to use up leftover turkey. Ingredients:

● Sourdough bread

● 3 oz leftover turkey

● 1 slice provolone cheese

● 2 tsp cranberry sauce

● A handful of fresh arugula

How to make it: Layer your turkey, provolone, cranberry sauce, and arugula between two slices of sourdough. Toast it for a warm upgrade.

Dietitian tip: Pair your sandwich with a side of roasted veggies, fresh fruit, or a bowl of soup for a satisfying lunch.

2. Cranberry Meatloaf

This is a favorite of mine.

Give traditional meatloaf a holiday-inspired twist! The cranberry adds a touch of sweetness that pairs well with ground beef.

Ingredients:

● 1 lb ground beef

● ¼ cup leftover stuffing

● 2 tbsp cranberry sauce

● 1 egg

● Salt and pepper to taste

How to make it: Preheat your oven to 375°F. Mix all ingredients until just combined, then shape into a loaf and place in a baking dish. Bake until the center reaches 160°F. Let it rest before slicing.

Dietitian tip: Serve with leftover mashed potatoes and a side of green beans or Brussels sprouts for a balanced dinner. That's one less container in the fridge!

3. Leftover Shepherd’s Pie

Mashed potatoes, sweet potatoes, and leftover veggies are practically begging to be turned into a shepherd’s pie. This is a great opportunity to combine a few odds and ends into one savory dish.

Ingredients:

● 1 lb ground beef

● Garlic, to taste

● Worcestershire sauce, to taste

● Tomato paste, to taste

● Leftover mashed potatoes or sweet potatoes

● Leftover vegetables, such as green beans or Brussels sprouts

● Optional: frozen peas and carrots

How to make it: Brown the ground beef with garlic, then stir in Worcestershire sauce, tomato paste, and a splash of water or broth to keep the mixture moist. Add your chopped veggies and spread everything into a baking dish. Top with leftover mashed potatoes or sweet potatoes and bake at 375°F until heated through and lightly golden on top.

Dietitian tip: Use the vegetables you already have, add extra if needed, and enjoy a comforting dinner with protein, carbohydrates, and veggies all in one dish.

4. Stuffing Waffles

Leftover stuffing can become versatile waffles that are perfect for brunch, lunch, or breakfast-for-dinner.

Ingredients:

● Leftover stuffing

● 1 egg

● A splash of broth

● Fried eggs for topping

● Mixed greens or fresh fruit for serving

How to make it: Mix the stuffing with the egg and just enough broth to help bind everything together. Press the mixture into a preheated, lightly greased waffle iron and cook until golden and crisp. Top with a fried egg and serve with mixed greens or fresh fruit.

Dietitian tip: The egg adds protein, while a side of fruit or greens brings freshness and variety to the plate. Bonus points for turning a traditional holiday side into something completely unexpected!

5. Thanksgiving Turkey Nachos

Your holiday leftovers are officially having a fiesta.

This customizable meal is perfect for using up leftover turkey while adding bold flavors.

Ingredients:

● Corn tortilla chips

● Shredded leftover turkey

● Shredded cheese

● Black beans

● Sliced peppers and onions

● Salsa

How to make it: Spread tortilla chips on a baking sheet and top with shredded turkey, black beans, peppers, onions, and cheese. Bake at 375°F until the cheese melts and everything is heated through. Finish with salsa and any favorite toppings you have on hand.

Dietitian tip: Black beans and turkey provide protein, while the peppers, onions, and salsa add flavor and color. Serve with extra veggies, guacamole, or your favorite toppings to make it your own.

The Takeaway: Leftovers Can Be Just as Exciting as the Main Event

Thanksgiving leftovers are more than just a fridge full of food. They're an opportunity to get creative, reduce food waste, save time in the kitchen, and enjoy your favorite holiday flavors in new ways.

Remember, building balanced meals doesn't mean following a strict formula or giving up the foods you love. It's about finding combinations that taste good, keep you satisfied, and work for

your lifestyle. Sometimes that looks like a turkey sandwich, and sometimes it looks like stuffing waffles. Both can have a place at the table.
